I'd like to thank everyone for in this thread for an enlightening discussion. That's much easier said than done though, especially when I haven't done any real programming about a year and I've only really worked with Java and python, which don't seem to be the best choices here given that all the other tooling is C or C++. (isn't this how MakeMKV does it?) All that's needed is someone to come along and put the pieces together in a new way with an interface that makes it easy for users digitize their content. I believe FFmpeg can remux streams between different containers, taking mpeg m2ts from the disc and putting them into a file without transcoding. There are libraries for working with dvd and blu-ray encryption like libaacs and libbdplus. Luckily, all the pieces seem to be there for someone make a free solution. Handbrake is free and can rip blu-ray but is very much built to transcode and doesn't fit the MakeMKV niche if 'take mpeg/m2ts stream from the disc and put it in an mkv.' mkvtoolnix puts things into MKVs but it doesn't seem to rip (from what I can tell after poking around the GUI for a few mins). VLC can rip but it's really not meant for it and the options aren't great. All there alternatives are either meant for transcoding or are limited in some other way.

I know there are alternatives, even ones that allow blu-ray ripping (vlc) but it's just not as turn-key or straightforward as MakeMKV. Unfortunately, it's not free (as in freedom) and I'm really trying to keep my setup as free as possible. I've been building a small home theater system and it's served as a wonderful tool that's allowed me to move content from my small disc collection to Jellyfin.
